Cooking Steps
Step 1: To begin the preparation of pumpkin Oambal, in a microwave safe bowl, combine 1/2 cup water and tamarind
Step 2: Microwave for about 30-40 seconds
Step 3: You can also combine water and tamarind in a pan and bring the mixture to a boil
Step 4: Once it cools down a bit, grind in a mixer/grinder
Step 5: Strain this mixture and set aside
Step 6: Wash and peel the pumpkin
Step 7: Remove its seeds and cut it into cubes
Step 8: In a wide pan, add pumpkin cubes and tamarind water
Step 9: Cover with a lid and cook for about 10 minutes or till pumpkin gets cooked and becomes soft
Step 10: Mash it with the help of a vegetable masher
Step 11: Keep aside
Step 12: In a pan heat oil and add dry red chilli and mustard seeds
Step 13: When mustard seeds crackle, add green chilli, raisins, pumpkin mixture and salt
Step 14: Mix well and add jaggery
Step 15: Let it cook for about a minute
Step 16: Remove from flame
Step 17: Serve this sweet and sour Pumpkin Oambal along with phulkas or parathas, Tomato Onion Gravy Sabzi and Spicy Paneer Pulao With Vegetables for a weekday lunch
