Step 1: To make the mustard vegetable curry, first of all steam the vegetables and keep them aside

Step 2: Now heat oil in a pan

Step 3: Add cumin, garlic, onion and cook till the onion becomes soft

Step 4: After the onion softens, add turmeric powder, red chili powder and mix it for 30 seconds

Step 5: After that add coconut milk, vegetable stock and Dijon mustard

Step 6: After 1 minute add salt, all the vegetables in it, cover the pan and let it cook for 3 to 4 minutes

Step 7: Turn off the gas and serve hot

Step 8: Serve mustard vegetable curry with spinach raita and tawa paratha for dinner
