Instructions
Preparation
Homemade Vegetable Stock:
-Add chopped vegetables (broccoli, French beans, carrot, pumpkin), ginger to a saucepan with 1 liter water.
-Bring to a boil on medium-high heat.
-Lower the flame and simmer uncovered for 35–40 minutes.
-Remove from heat, cool slightly, and strain, use it.
Wash and slice mushrooms (shiitake, wood ear, button,& oyster)
Cooking Steps
Cook Rice:
- Boil 1/4 cup of rice (50g) with 1 cup water. Set aside (yields ~150g cooked rice).
Prepare Mushrooms:
- Heat olive oil in a pan.
- Stir-fry ginger, and sliced mushrooms for 5-7 minutes.
- Add soy sauce and cook until tender.
Cook Tofu:
- Slice tofu and air-fry or pan-grill with a light oil spray.
Pickle Cabbage:
- Blanch cabbage in boiling water (1-2 min).
- Toss with vinegar, a pinch of salt.
Make Gravy:
- In a pan, simmer vegetable stock with 1 tbsp soy sauce, and ginger.
- Thicken with 1/2 tsp rice flour mixed in water.
Serve
- Shape rice into a dome on the plate.
- Add tofu slices, mushrooms, and pickled cabbage on the sides.
- Pour gravy over or around the rice.
- Garnish with arugula leaves microgreens.
