Rice, raw, brown

Instructions
Preparation
Wash the brown rice thoroughly and soak it in water for 30 minutes. Drain before cooking.
Clean the mushrooms with a damp cloth or rinse them lightly and slice them.
Cooking Steps
Heat oil in a pan or pressure cooker over medium heat. Add cumin seeds, cardamom. Sauté for 30 seconds until aromatic.
Add chopped onions and sauté until golden brown.
Add minced garlic, ginger paste, and green chili. Cook for 1-2 minutes until fragrant.
Add chopped tomatoes and cook until they turn soft and mushy.
Add turmeric powder, garam masala, and salt. Mix well.
Add sliced mushrooms and green peas. Cook for 2-3 minutes until the mushrooms release their water.
Add the soaked and drained brown rice. Mix gently to coat the rice with the spices.
Pour 2 cups of water into the pan. Cover and cook on low heat until the rice is fully cooked and water is absorbed (approximately 25-30 minutes). If using a pressure cooker, cook for 2 whistles.
Once done, fluff the rice gently with a fork. Garnish with fresh coriander leaves.
Serve hot.
