Cooking Steps
In a large mixing bowl, combine all the flours (maize, wheat, amaranth, and besan). Mix well.
Gradually add water to the flour mixture and knead it into a smooth, soft dough. Since maize flour can be crumbly, knead it gently and ensure the dough is pliable.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
After resting, divide the dough into equal portions and roll each portion into small balls.
Dust the rolling surface and rolling pin with maize flour or wheat flour to prevent sticking.
Roll out each ball into a thick roti. These rotis are slightly thicker than regular ones due to the maize flour.
Heat a tawa (flat griddle) over medium heat. Once hot, place the rolled-out roti on the tawa.
Cook for about 1 minute on one side, flip, and cook the other side for another 1 minute. Flip again and press gently with a spatula or cloth to cook evenly.
Remove from the tawa and serve hot.
