Cooking Steps
Step 1: To begin making the Mixed Vegetable Handi recipe, add tomatoes and cashews in a mixer grinder, puree them and keep it aside
Step 2: Next, heat oil in a heavy bottomed pan
Step 3: Add bay leaves, cumin seeds and cook for 15 seconds
Step 4: After 15 seconds, add sliced onions, green chilli, ginger, garlic and saute for about a minute
Step 5: After a minute, add finely sliced onions and cook till the onion turns golden brown in colour
Step 6: Next, add tomato puree and cook for about 3 to 5 minutes
Step 7: After 5 minutes, add turmeric powder, red chilli powder, coriander powder and garam masala powder
Step 8: Add butter and mix everything well, let it cook for about a minute
Step 9: After a minute, add the diced onion, diced carrot, corn, peas, french beans, capsicum, cauliflower, button mushrooms and paneer
Step 10: Give it a toss and add water
Step 11: Add salt and cover the lid
Step 12: Let it cook for 10 to 12 minutes on medium flame, keep checking and stirring in between if the vegetables are cooked properly or not
Step 13: Meanwhile, take a small bowl, add cream and curd together
Step 14: Mix it well and see that no lumps are formed
Step 15: Once the vegetables are soft, add the cream curd mixture and mix it with the vegetables
Step 16: Cook Mixed Vegetable Handi on low flame for 1-2 minutes, sprinkle kauri methi, add lemon juice and mix everything nicely
Step 17: Once it is done, garnish Mixed Vegetable Handi with chopped coriander and mint leaves
Step 18: Mixed Vegetable Handi is ready to serve
Step 19: Serve Mixed Vegetable Handi along with Tawa Parathas and Boondi Raita for a weekday meal
