Preparation
-Wash and chop all the vegetables and keep them aside
Cooking Steps
Heat oil in a pan, add cumin seeds, and let them splutter.
Add in ginger paste and cook for a minute.
Add chopped tomato, cook until soft and oil separates.
Add chopped mixed vegetables and paneer cubes, stir-fry for a few minutes.
Lower heat, add spices (turmeric, red chili, coriander, cumin, salt), and mix well.
Cover and cook on low heat, stirring occasionally, until vegetables are tender (about 10-15 minutes).
Sprinkle garam masala, garnish with fresh coriander, and serve hot .
