Instructions
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add grated ginger and minced garlic. Sauté for 1-2 minutes until the raw smell goes away.
Add chopped tomatoes and cook for 2-3 minutes until they turn mushy.
Add coriander powder, cumin powder, garam masala, turmeric powder, red chili powder, and salt. Stir well.
Add all the chopped vegetables to the pan and mix well, ensuring they are coated in the masala.
Add water as required and let the curry cook for 15-20 minutes over medium heat until the vegetables are cooked through and the gravy thickens.
Garnish with fresh coriander leaves and serve hot with rice or roti.
