Foxtail Millet (Raw)
1 small cup (100g)
Red Onion
0.25 cup, chopped (50g)
Clove Garlic, Chopped
1 tsp (5g)
Fresh Parsley (chopped)
2 tbsp (10g)
Fresh cilantro (chopped)
2 tsp (10g)
Besan (chickpea flour)
1 tbsp (15g)
Ground Cumin
0.5 tsp (1g)
Coriander seeds

Instructions
Preparation
foxtail millet, soaked overnight and drained.
Cooking Steps
In a blender or food processor, grind the soaked millet into a coarse paste without adding water.
Transfer the millet paste to a mixing bowl and add the chopped onion, minced garlic, chopped parsley, chopped cilantro, besan, ground cumin, ground coriander, and salt. Mix well.
Form the mixture into small balls or patties.
Heat oil in a non-stick pan over medium heat.
Place the millet falafel balls/patties on the pan and cook until golden brown on all sides. You can also use an air fryer to cook them instead of frying them in oil.
Remove the falafel from the pan and place them on a paper towel-lined plate to drain excess oil.
Serve hot.
