Cooking Steps
Step 1: To begin making the Milagu Kozhambu recipe, dry roast all ingredients mentioned under the list ‘for milagu masala powder’
Step 2: Let the spices cool and grind into powder
Step 3: Heat gingerly oil in a pan
Step 4: Add crushed garlic and shallots and saute till the onions turn translucent
Step 5: Add fenugreek seeds
Step 6: Extract the juice of tamarind and pour into the pan
Step 7: Boil the tamarind juice until oil separates from the sides of the pan
Step 8: Add 4 heaped tablespoon of milagu masala powder along with salt to taste, stir well
Step 9: Let it cook for 5 minutes on low flame
Step 10: Meanwhile heat 1 teaspoon oil in another pan
Step 11: Add mustard seeds and let it splutter
Step 12: Add curry leaves and a pinch of asafoetida
Step 13: Add the tempering into the curry
Step 14: Serve hot
Step 15: Serve Milagu Kozhambu along with Carrot and Beans Thoran and Steamed Rice for a weekday meal
