Preparation
Soak Chickpeas: Wash and soak the chickpeas overnight in 4-5 cups of water.
Boil Chickpeas: Drain the soaked chickpeas and rinse. Boil them in fresh water with a pinch of salt for about 25-30 minutes or until tender. Drain the water and set aside.
Cooking Steps
Heat oil in a skillet over medium heat.
Add the minced garlic and sauté for about 30 seconds until aromatic.
Toss in the boiled chickpeas, cumin, paprika, and a pinch of salt. Warm for 2-3 minutes, stirring gently to coat the chickpeas in spices.
In a large mixing bowl, combine the warm chickpeas with cherry tomatoes, cucumber, red bell pepper, and red onion.
Drizzle with the remaining lemon juice. Toss well to combine.
Add black pepper, chopped parsley. Toss lightly again.
Serve immediately as a warm salad.
