Cooking Steps
Step 1: To begin making the Maash Ki Dal Khasgi recipe, rinse urid dal well, soak in enough water overnight
Step 2: Next day, wash the dal well
Step 3: In a deep bottom pan, add 1 teaspoon oil and roast the soaked dal for about 3 minutes
Step 4: Then add enough hot warm along with some salt and cook the dal until it’s tender
Step 5: We want the dal to be firm and cooked
Step 6: If there is too much water in the dal, discard the excess water
Step 7: Turn off flame and keep the cooked dal aside
Step 8: Now in a mortar and pestle crush ginger-garlic-green chilies well
Step 9: Into a handi(or wok) add remaining oil
Step 10: Add sliced onions and cook until onions turn translucent
Step 11: Add the ground ginger-garlic-green chili paste and cook till the raw smell of the paste is gone
Step 12: Add the spice powders, mix well
Step 13: Add the cooked dal, give it a stir
Step 14: Check for seasoning and add salt as required
Step 15: In another small pan, heat oil
Step 16: Add cumin seeds, let it splutter
Step 17: Then add sliced onions and garlic, fry until onions garlic turn brown
Step 18: Once dal reaches the desired consistency turn off flame
Step 19: Add the tempering over the dal
Step 20: Garnish with coriander leaves and ginger juliennes
Step 21: Serve Maash Ki Dal Khasgi along with hot Phulkas and Palak Raita for a weekday meal
