Preparation
Cook the Quinoa:
- Rinse 1/4 cup of quinoa thoroughly under running water. Add it to a saucepan with water, a pinch of salt, and cook on medium heat until the water is absorbed and the quinoa is fluffy. Let it cool.
Cooking Steps
In a large mixing bowl, add the cooked quinoa.
Toss in the chopped onion, tomato, cucumber and carrot.
Sprinkle the chaat masala, cumin powder, salt.
Drizzle the lemon juice over the mixture and mix well to combine all flavors.
Garnish with chopped coriander leaves.
Serve immediately or refrigerate and serve chilled.
