Makhana Phirni
Makhana Phirni is a classic Indian dessert that is made with rice, milk, and sugar. In this recipe, we have replaced the rice with makhana, also known as fox nuts, making it a healthy and gluten-free option. This recipe is also vegetarian-friendly and is a great source of protein, calcium, and vitamins. However, people with a dairy allergy or nut allergy should avoid this dish.

Ingredients
Makhana
100 gm (100g)
Skimmed Milk
4 cup (1000g)
Apple
0.5 cup, chopped (100g)
Saffron
2 gm (2g)
Pistachio
5 pieces (5g)
cardamom powder
0.5 tsp (1g)
Instructions
Cooking Steps
Dry roast the makhana in a pan until they turn slightly brown and crunchy. Allow them to cool and then grind them into a coarse powder.
Soak the saffron strands in 2-3 tablespoons of warm milk for 10-15 minutes.
In a heavy-bottomed pan, add milk and bring it to a boil.
Reduce the heat and let the milk simmer for about 20-25 minutes, stirring occasionally, until it reduces to half its original volume.
Add saffron milk, and cardamom powder to the milk and mix well.
Add the ground makhana powder to the milk and stir well to avoid any lumps.
Cook for another 5-7 minutes until the mixture thickens and becomes creamy.
Remove from heat and let it cool down to room temperature.
Add chopped pistachios and apples to the mixture and mix well.
Pour the phirni into individual serving bowls and refrigerate for 2-3 hours or until set.
Garnish with more chopped pistachios and serve chilled.
NOTE: Traditionally Phirini recipe is made from rice, full fat milk, sugar but we make healthier version of it.
