Cooking Steps
Step 1: To begin making the Maharashtrian Kadhi Recipe, first mix the yogurt and besan in a bowl
Step 2: Add 1 cup water and whisk it to a smooth mixture without any lumps
Step 3: Heat a sauce pan with oil, add mustard seeds and cumin seeds, leave it to splutter for 10 seconds
Step 4: Add asafoetida, green chilli, ginger and curry leaves and fry them for 10 more seconds till the aroma is released
Step 5: At this stage you can add the yogurt and besan mixture and keep at a low heat and leave it to boil
Step 6: Keep whisking till it thickens
Step 7: Add salt and sugar and adjust it according to your taste
Step 8: Switch off the heat
Step 9: Once the kadhi is ready, garnish the kadhi with some chopped fresh coriander leaves
Step 10: Serve the Maharashtrian Kadhi Recipe along with Gajarachi Koshimbir, Steamed Rice and a roasted Papad for a delicious weekday meal
