Cooking Steps
In a large bowl, mix the flour, salt, and reduced ghee.
Rub the ghee into the flour until crumbly.
Add water gradually and knead into a firm, stiff dough.
Cover with a damp cloth and let it rest for 30 minutes.
Make the Filling:
Heat a pan on low flame, lightly toast the khoya for 2-3 minutes. Let it cool.
Mix the khoya with stevia/monk fruit , grated coconut, raisins, and cardamom powder.
Shape the Gujiyas:
Divide the dough into small balls and roll out into small circles (~4 inches).
Place a spoonful of filling in the center.
Apply water on the edges, fold into a half-moon shape, and seal. Use a fork or gujiya mold for a neat edge.
Bake the Gujiyas (Instead of Frying):
Preheat the oven to 180°C (350°F).
Place the gujiyas on a lined baking tray.

Bake for 20-25 minutes, flipping halfway for even cooking, until golden and crisp.
