Step 1: To make lobia masala, first soak the lobia in water for 2 hours

Step 2: Now put them in a pressure cooker with 1 cup of water and cook till it becomes soft

Step 3: After cooking, drain the water and keep it aside

Step 4: Now heat oil in a pan

Step 5: Add grated ginger and cook for 20 seconds

Step 6: After 20 seconds, add tomatoes and cook till the tomatoes become soft

Step 7: After softening, add turmeric powder, coriander powder, garam masala powder, green chillies, salt and cowpea

Step 8: Mix, reduce the heat and let it cook for 15 minutes

Step 9: After that add lemon juice and garnish with green coriander

Step 10: Serve the Lobiya Masala with Bundi Raita and Tawa Paratha for dinner
