Litti Chokha

Preparation
-Pressure cook Potato.
-Roast egg plant.
Cooking Steps
For the Litti:
In a large mixing bowl, combine the whole wheat flour, sattu, ajwain, kalonji, red chili powder, salt, and mustard oil. Mix well.
Gradually add water and knead the mixture into a smooth dough. Cover and let it rest for 30 minutes.
Preheat the oven to 180°C.
Take a small portion of the dough, roll it into a ball, and flatten it with your palms.
Add a tablespoon of sattu filling in the center and bring the edges together to seal the ball.
Place the stuffed balls on a baking tray and bake for 25-30 minutes until they turn golden brown.
For the Chokha:
In a large mixing bowl, combine the mashed potatoes, and mashed roasted eggplant, chopped onion, chopped green chilies, garlic, mustard oil, and salt. Mix well.
Garnish with fresh coriander leaves and serve alongside the Litti.
