Cooking Steps
Step 1: To begin making the Lemonade Cupcakes recipe, preheat the oven at 180°C
Step 2: In a large mixing bowl, mix the sugar and the yoghurt well, until the sugar dissolves partially
Step 3: Add in the butter and vanilla essence and mix well
Step 4: Once the batter is formed, add in the lemon juice and give a final mix
Step 5: Scoop the batter into the cupcake tins and bake for 15 to 20 minutes
Step 6: While the cupcakes are being baked, prepare the buttercream
Step 7: Beat the softened butter until its light and fluffy
Step 8: Then add in the icing sugar and lemon zest part by part mixing very well in between each addition
Step 9: Refrigerate it for half an hour before piping these onto the cooled cupcakes
Step 10: Once it is done, garnish it with lemon zest and serve
Step 11: Serve the Lemonade Cupcakes on its own for a birthday party or any special occasion along with Pav Bhaji and Chole Aloo Tikki Chaat
