Instructions
Preparation
Wash the lettuce leaves and pat them dry.
In a small bowl, whisk together the soy sauce, olive oil, and garlic until well combined.
Cooking Steps
Heat a non-stick pan over medium heat. Add the carrot, bell pepper, and mushrooms and sauté for 5-7 minutes until the vegetables are tender but still crunchy.
Add the chopped onions and sauté for an additional minute.
Pour the sauce over the vegetables and toss to coat evenly.
Remove from heat and let it cool for a few minutes.
Take a lettuce leaf and spoon some of the vegetable mixture onto it, add lemon juice, Roll up the lettuce leaf like a burrito, tucking in the sides as you go.
Repeat with the remaining lettuce leaves and vegetable mixture.
