Instructions
Preparation
In a medium-sized pot, add 2 cups of water and bring it to a boil.
Add the chicken breast to the boiling water and let it cook for 15-20 minutes.
Remove the chicken from the pot and let it cool for a few minutes.
Use a fork or your hands to shred the chicken into small pieces.
Cooking Steps
In a bowl, combine the shredded chicken, tomatoes, cucumbers, red onions, coriander, and chopped mint leaves. Toss to mix well.
In a separate small bowl, whisk together lime juice, soy sauce, and sesame oil to make the dressing.
Pour the dressing over the chicken and vegetable mixture. Toss until everything is well coated.
Take a lettuce leaf and spoon the chicken and vegetable mixture onto the center of the leaf.
