Instructions
Cooking Steps
Heat olive oil in a large pot over medium heat. Add chopped onions, tomato,garlic and carrot Sauté until the vegetables are tender.
Add cumin powder and turmeric powder. Stir well.
Add red lentils and water. Bring to a boil.
Reduce the heat and let the soup simmer for 30-35 minutes or until the lentils are cooked and tender.
Add salt and pepper to taste.
Let the soup cool down a bit before blending it with an immersion blender or in a blender until smooth.
Reheat the soup, if necessary, and serve hot.
Garnish with fresh coriander leaves.
