Honey

Cooking Steps
In a glass jar, combine the water kefir grains, honey, lemon juice, and fresh ginger.
Stir well to dissolve the sugar.
Cover the jar with a cloth or coffee filter and secure it with a rubber band.
Let the mixture sit at room temperature for 24-48 hours, depending on the desired level of fermentation. The longer it sits, the more tart and fizzy it will become.
After 24-48 hours, strain the liquid through a fine-mesh strainer, discarding the ginger and lemon slices if desired.
Transfer the liquid to a bottle or jar with a tight-fitting lid and refrigerate until ready to drink.
