Cooking Steps
Step 1: To start cooking Layered Thai Basil & Tofu Rice Recipe, get prep with all the ingredients and then pound red chilli and garlic in a pestle & mortar
Step 2: Cook rice in an electric rice cooker
Step 3: Electric cooker is the best for the measurements given above
Step 4: While the rice is getting done, heat oil in a wok
Step 5: Add the ground red chilli and garlic paste and fry them well
Step 6: Add Onion and fry for a minute
Step 7: Add tofu and continue to fry until they turn golden brown
Step 8: Add, light & dark soya sauce, shitake mushroom to this mix
Step 9: Add very little salt as soya sauce has already salt in it
Step 10: Mix them all well and fry for 2 minutes
Step 11: Keep stirring continuously
Step 12: Add basil leaves and mix them well
Step 13: Cook for a minute
Step 14: For layering the rice, take a serving bowl and layer the bottom portion with rice followed by the basil tofu curry
Step 15: Repeat layering for 2 or 3 times and end with tofu basil curry on top
Step 16: Garnish with roasted peanuts (optionally)
