Step 1: To begin making the Kumro Patai Ilish Paturi Recipe, rub the clean fish pieces with salt and turmeric powder
Step 2: Keep marinated for 30 minutes
Step 3: In a bowl, add black and yellow mustard seeds paste, poppy seeds paste, green chilli paste, salt, 1 teaspoon turmeric powder and 1 tablespoon of mustard oil
Step 4: Mix it very well
Step 5: In this mixture dip Hilsa shad/ ilish pieces
Step 6: Let fish pieces in this mixture for 10 minutes
Step 7: Take two pumpkin leaves for 1 fish piece
Step 8: Now take 1 fish piece along with 1 tablespoon of marinade and place it on over 2 pumpkin leaves
Step 9: Fold the pumpkin leaves
Step 10: Take a banana leaf, then place folded pumpkin leaves on it, add 1 green chilli and 1 teaspoon of mustard oil on it
Step 11: Wrap the banana leaves and secure it with string
Step 12: Do same with all fish pieces
Step 13: In a skillet or shallow frying pan heat 2 tablespoons of mustard oil
Step 14: Add banana leaves packet on it
Step 15: Fry in medium heat for 10 minutes, cover the lid then flip it up and fry for another 10 minutes
Step 16: Take it out in a serving plate
Step 17: Open banana leaves packet when you are ready to serve
Step 18: Serve Kumro Patai Ilish Paturi along with Steamed Rice and Kachumber Salad for a weekend lunch or dinner
