Soya chunks (Nutrela)
0.25 cup (50g)

Instructions
Preparation
Wash the millet thoroughly under running water. Soak it in water for 30 minutes, then drain.
Boil water with a pinch of salt.
- Add soya chunks and let them cook for 5-6 minutes until they soften.
- Drain, rinse with cold water, and squeeze out excess water.
Cooking Steps
Cook Kodo Millet:
- In a saucepan. Add rinsed and drained Kodo millet.
- Add 2 cups of water.
- Cook on medium heat until the water is absorbed and the millet is tender (around 15 minutes). Set aside.
Prepare the Masala Base:
- Heat oil in a pan or wok.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté until the raw smell disappears.
- Add chopped tomatoes and cook until soft and mushy (4-5 minutes).
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
- Add the boiled and squeezed soya chunks. Stir well to coat them with the masala.
- Let it cook for 3-4 minutes on low-medium heat.
Combine Millet and Masala:
- Add the cooked Kodo millet to the masala mixture.
- Mix thoroughly to combine everything evenly.
Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot.
