Instructions
Preparation
Cooking Millet:
Rinse the kodo millet in water a couple of times to remove any impurities.
In a pot or saucepan, add water and bring it to a boil.
Add the rinsed kodo millet to the boiling water along with a pinch of salt. Stir well.
Reduce the heat to low, cover the pot with a lid, and let the millet cook for 15-20 minutes until all the water is absorbed and the millet is tender.
Turn off the heat and let the millet sit covered for 5 minutes.
Cooking Steps
In a large mixing bowl, combine the cooked millet, chopped cucumber, chopped tomatoes, chopped bell peppers, and chopped red onions.
In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Pour the dressing over the millet mixture and toss to coat.
Serve it and garnish with coriander leaves.
