Kodo Millet (Raw)

Egg, poultry, white, raw

Instructions
Preparation
Wash and soak the kodo millet for 20–30 minutes to ensure even cooking and fluffiness.
Prepare Egg Whites:
- Lightly scramble egg whites in a non-stick pan using no oil or a few drops of water.
- Cook until just set, avoiding overcooking. Set aside.
Cooking Steps
In a pot, add soaked millet and water, cook kodo millet in water.
Cover the pot and simmer until the millet is soft and fluffy. Set aside.
Heat oil in a small pan.
Add mustard seeds and let them splutter.
Add curry leaves, chopped green chilli, and a pinch of turmeric powder Stir well.
Now add the cooked millet to the tempering. Mix well to incorporate the flavors.
Gently fold in the cooked scrambled egg whites.
Turn off the heat and add salt to taste.
Add lemon juice after removing the dish from heat. Mix thoroughly to brighten flavors.
Serve it.
