Step 1: To make Kerala Tomato Fry, first heat the oil in a pan

Step 2: Add mustard seeds and dry red chilies

Step 3: When the mustard starts to crackle, add curry leaves, green chilies and onions

Step 4: After 1 minute add ginger garlic paste

Step 5: Cook onion until it becomes soft and brown

Step 6: After that add Kashmiri red chilli powder and turmeric powder

Step 7: Mix well and add chopped tomatoes

Step 8: Let it cook for 5 to 7 minutes

Step 9: After the tomatoes are soft, add salt and mix

Step 10: Cook for 1 minute and then garnish with green coriander

Step 11: For dinner, serve Kerala tomato fry with beetroot sambar and rice
