Cooking Steps
Step 1: To prepare Kerala Varutharacha Mutton Curry Recipe, mash mutton pieces well
Step 2: Add the mutton pieces into pressure cooker along with cumin seeds and little shallot slices, turmeric powder and salt
Step 3: Add ½ cup water and pressure cook for 1 whistle
Step 4: Now in a wok add 1 teaspoon coconut oil
Step 5: Add shallots, ginger and garlic pieces and sauté for 2 minutes
Step 6: Remove it from the pan and keep aside
Step 7: Add dried red chilies, coriander seeds, cumin seeds, fennel seeds, cinnamon, cloves, cardamom seeds, and roast
Step 8: After add grated coconut and sauté till spices are roasted well and coconut turns golden brown
Step 9: Make sure not to burn the spices
Step 10: Remove from the pan
Step 11: Transfer shallots, ginger garlic mix, roasted spice-coconut mix into a blender
Step 12: Add little water and grind into smooth paste
Step 13: In a wok add coconut oil
Step 14: Saute sliced shallots until translucent
Step 15: Add the coconut slices
Step 16: Add the cooked mutton pieces and roast for 5 minutes
Step 17: Next add tomato slices and continue to cook
Step 18: After some time add red chili powder, salt to taste and mix
Step 19: Add the ground masala paste and cook until oil separates from the sides of the pan
Step 20: Add the water in which mutton was cooked into the wok and bring it to boil
Step 21: Sprinkle curry leaves
Step 22: Check for seasoning
Step 23: Once fully cooked turn off flame and serve Kerala Varutharacha Mutton Curry Recipe hot with steamed rice
