Cooking Steps
Step 1: To begin making the Kerala Special Vegetable Stew recipe, firstly wash and steam the vegetables (including onion) till they are fork tender
Step 2: Heat a heavy bottomed pan with coconut oil and temper with the whole spices and curry leaves
Step 3: Now add the grated ginger and garlic and saute' for 20 seconds only
Step 4: Add the steamed vegetables and the thin coconut milk
Step 5: Cook covered over low flame for 5 to 7 minutes
Step 6: After 5 to 7 minutes, add the thick coconut milk, stir to mix and switch off
Step 7: Add salt and it is ready to be served
Step 8: Using fresh whole spices and fresh coconut gives the stew it's authentic taste
Step 9: Serve Kerala Special Vegetable Stew with Appam or Idiyappam for a perfect South Indian meal
