Step 1: To begin making Kathiri Urulai Masala Kuzhambu, soak tamarind in 1 cup of hot water and extract its pulp
Step 2: Keep aside
Step 3: Heat a tablespoon of oil in a heavy bottomed pan
Step 4: Once the oil is hot, add mustard seeds
Step 5: When mustard seeds crackle, add cinnamon stick and curry leaves
Step 6: Sauté it for a minute
Step 7: After a minute, add chopped onion and sauté it till onion turns soft and translucent
Step 8: Add in the sliced brinjal and potato, mix, cover the pan with a lid until the potatoes and brinjals are half cooked
Step 9: This will take about 3 to 4 minutes
Step 10: Now, add finely chopped tomato and cook till the tomatoes turns mushy
Step 11: Finally, add in tamarind pulp, turmeric powder, red chilli powder and salt
Step 12: Let it cook for 3 to 4 minutes
Step 13: Meanwhile, take grated coconut, khus khus, fennel seeds, cashews and red chillies in a mixer jar
Step 14: Grind it to a smooth paste
Step 15: Add this paste to the gravy
Step 16: Boil it for 2-3 minutes
