Preparation
Cut Jackfruit carefully into small pieces.
Boil or pressure cook the jackfruit pieces.
Cooking Steps
Heat oil in a non-stick pan over medium heat. Add cumin seeds and let them splutter.
Add ginger paste and sauté for 1-2 minutes until the raw smell goes away.
Add chopped tomatoes and cook for 3-4 minutes until they soften and turn mushy.
Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Stir well.
Add the drained jackfruit to the pan and mix well, ensuring the masala coats the jackfruit.
Cover the pan with a lid and let it cook for 10-15 minutes over low heat, stirring occasionally.
Garnish with fresh coriander leaves and serve hot.
