Kashmiri Noon Chai, also known as Sheer Chai or Pink Tea, is a traditional beverage from Kashmir. It is distinctly different from regular Indian chai due to its salty taste, light creamy as here we use skimmed milk, and beautiful pink color. This tea is perfect for colder weather, offering a comforting, warm drink with a unique blend of flavors.

Skimmed Milk

Preparation
-Chill the normal water in advance and keep it ready for use.
Cooking Steps
Boil Tea Leaves:
- In a saucepan, bring 1½ cups of water to a boil. Add 2 tsp of Kashmiri green tea leaves and simmer for 10–15 minutes until the water reduces slightly and turns a dark reddish color.
Add Baking Soda:
- Add ½ tsp of baking soda to the tea and whisk or stir vigorously. This step is crucial, as the baking soda helps develop the pink color. The liquid will foam and slightly change its hue.
Add Ice-Cold Water:
- Pour in ½ cup of ice-cold water to shock the tea and whisk again. This creates froth and enhances the pink color.
Incorporate Milk:
- Add 1½ cups of skimmed milk to the tea mixture and bring it to a gentle boil. Stir occasionally to ensure the flavors blend well.
Season with Salt:
- Add a pinch of salt to taste. Stir well to combine.
Strain and Serve:
- Strain the tea into cup to remove tea leaves. Serve hot and enjoy.
