Cooking Steps
Step 1: To begin making the Karnataka Style Orange Peels Curry recipe, Peel out 2 oranges
Step 2: Gently scrape the white region from the orange peel using a spoon
Step 3: Remove as much as possible as this will reduce the bitterness
Step 4: Chop the orange peels finely
Step 5: Soak tamarind in water
Step 6: After it's soaked well, squeeze out tamarind water and keep aside
Step 7: Heat oil in a heavy bottomed pan and temper with mustard seeds, urad dal, cumin seeds & fenugreek seeds
Step 8: When it splutters add curry leaves, red chilli powder, green chilli, hing and turmeric powder
Step 9: Mix and add chopped orange peel
Step 10: Fry for 4-5 minutes
Step 11: Later add tamarind water, salt, jaggery, red chilli powder and rasam powder
Step 12: Add some water and close the lid
Step 13: Keep the flame on low medium and allow the peel to cook well
Step 14: Mix in between
Step 15: Meanwhile in a mixing bowl, mix rice flour in water such that no lumps are formed
Step 16: When orange peels are cooked well, add the rice flour mix to the curry and allow it to boil for 1-2 minutes
Step 17: Adding rice flour gives nice thickness to the gravy
Step 18: If the desired consistency is attained, switch off
Step 19: Serve Karnataka Style Orange Peels Curry along with Cabbage Thoran and Whole Wheat Lachha Paratha for your weekday meal
Step 20: It even tastes great with Steamed Rice
