Jowar Flour
1 small cup (100g)
Chopped Green Chilli
1 tsp (2g)
Fresh Coriander Leaves (chopped)
1 tbsp (5g)
Common Salt
0.5 tsp (3g)
Mustard oil

Instructions
Cooking Steps
Make the Batter
-In a bowl, mix jowar flour, curd, and salt.
-Add water gradually to form a thick pancake-like batter.
-Let it rest for 15–20 minutes (helps slightly soften jowar).
Add Eno
-Just before cooking, stir in ½ tsp plain Eno.
-Mix gently; the batter will become light and bubbly.
Prepare Toppings
In a small bowl, mix chopped spinach, carrot, zucchini.
Cook Uttapams
-Heat a non-stick or iron tawa on medium heat.
-Grease lightly with oil.
-Pour a ladle of batter and spread slightly thick (not as thin as dosa).
-Sprinkle the mixed veggies on top.
-Cover and cook for 2–3 minutes until base firms up.
-Flip gently and cook the other side for 1–2 minutes.
-Serve hot.
