Cooking Steps
Step 1: To begin making Jhure Jhure Aloo Bhaja recipe, wash and peel potatoes
Step 2: Use a Mandolin Slicer to grate them into thin sticks
Step 3: Alternatively you can cut the potato in long thin stripes
Step 4: Now soak grated potatoes in water for 10 minutes
Step 5: Now drain the water completely
Step 6: Spread the potato strips on a clean kitchen towel to absorb water on their surface
Step 7: Once the moisture is completely absorbed, transfer those strips to a plate
Step 8: Heat a kadai on a medium flame and add oil for deep frying
Step 9: Once the oil is hot, put few strips of potatoes in oil and fry till they turn golden brown
Step 10: Take them out and place them on an absorbent paper
Step 11: Similarly fry the remaining potato strips
Step 12: Deep fry the curry leaves in the same oil and keep aside
Step 13: Sprinkle some salt and chilly powder and mix well
Step 14: Adjust the spice level according to your taste
Step 15: Sprinkle some curry leaves and mix well
Step 16: You can also add dried herbs kasoori methi instead of curry leaves
Step 17: You can also add some crushed black pepper for some additional zing
Step 18: Serve the Jhure Jhure Aloo Bhajas hot as a tea time snack or as a side dish with Bengali style Cholar Dal and Jeera Rice or with Bhog Khichuri for a comforting bengali meal
