Preparation
Peel and cut the raw jackfruit into pieces, boil it in water with a pinch of salt until tender, and shred it finely using hands or a fork.
Dry roast gram flour in a pan until it turns aromatic and slightly golden. Let it cool.
Cooking Steps
In a large mixing bowl, combine shredded jackfruit, onions, garlic paste, ginger paste, green chilies, coriander leaves, and spices (cumin powder, coriander powder, red chili powder, garam masala).
Add roasted gram flour and mix well. Adjust salt and add lemon juice.
Knead the mixture into a dough-like consistency. If the mixture feels too dry, add 1-2 teaspoons of water. If it's too wet, add a little more gram flour.
Divide the mixture into equal portions and shape into small kebabs.
Heat a non-stick pan or grill and grease it lightly with oil. Place the kebabs and cook them on medium heat until golden brown on both sides (around 3-4 minutes per side).
Serve hot.
