Cooking Steps
Step 1: To begin with Indian Style Fajitas, heat 1 teaspoon oil in a cast iron pan on medium flame, sauté the mushrooms till they are cooked
Step 2: This will take about 3-4 minutes on medium high flame, stirring continuously
Step 3: Once cooked turn off the flame and set aside
Step 4: Heat 1 teaspoon oil in another pan on medium flame, and add the onions
Step 5: When the onions turn translucent, add the bell peppers and zucchini and sauté for a few minutes
Step 6: Ensure the vegetables are not over cooked
Step 7: Add mexican seasoning, mushrooms and salt and mix everything well
Step 8: Take a roti and place the veggies in the middle and roll up the roti
Step 9: Your fajitas are ready to be served
