Prepare Hung Curd:
- Place regular curd in a muslin cloth or fine sieve and let it hang for 2-3 hours to remove excess whey. You’ll get thick, creamy hung curd.
Soak Chia Seeds:
- Add chia seeds to a bowl and pour 1/4 cup (60ml) of water over them. Stir and let them soak for 15-20 minutes until they swell and form a gel-like texture.
Cooking Steps
In a mixing bowl, combine the hung curd and soaked chia seeds. Mix well until they are evenly incorporated.
Gently fold in half of the mango cubes into the hung curd mixture.
Serve the pudding in individual bowls.
Top each serving with the remaining mango cubes for a burst of freshness and texture.
