Preparation
Soak Chickpeas: Wash and soak the chickpeas overnight in 4-5 cups of water.
Boil Chickpeas: Drain the soaked chickpeas and rinse. Boil them in fresh water with a pinch of salt for about 25-30 minutes or until tender. Drain the water and set aside.
Cooking Steps
In a small bowl, mix olive oil, honey, Dijon mustard, minced garlic, smoked paprika, salt, and black pepper to make the glaze.
Heat a skillet over medium heat. Add the boiled chickpeas and pour the glaze over them. Toss well to coat the chickpeas evenly.
Sauté for 5-7 minutes until the chickpeas are slightly caramelized and golden. Remove from heat.
In a large bowl, combine the baby spinach, cherry tomatoes, cucumber, and red onion Toss gently.
Add the warm glazed chickpeas on top of the salad. Serve it
