Cooking Steps
Heat the lactose-free milk in a heavy-bottomed pan over medium heat.
Keep stirring the milk to prevent it from sticking to the bottom of the pan.
Once the milk comes to a boil, reduce the heat and add lime juice or vinegar.
Stir well and let it simmer for a few minutes until the milk starts to curdle.
Turn off the heat and let the mixture cool down for a few minutes.
Once it has cooled down, strain the mixture through a muslin cloth or cheesecloth.
Rinse the curd under cold water to remove any traces of lime juice or vinegar.
Squeeze out any excess water and hang the muslin cloth for 2-3 hours to drain out any remaining water.
Once the curd is set, transfer it to a bowl and refrigerate it until it's ready to be used
