Whole Wheat Flour
1 small cup (100g)
Jaggery, cane
0.25 cup (60g)
Cardamom, green
0.5 tsp (2.5g)
Fennel Seeds
0.25 tsp (1.25g)
Ghee
1 tbsp (15g)
Plain Water
0.5 small glass (100g)

Cooking Steps
In a mixing bowl, combine whole wheat flour, grated jaggery, cardamom powder, fennel seeds, Mix well.
Add ghee to the mixture and mix until the ghee is well incorporated.
Add water gradually and knead the dough until it is smooth and pliable. The dough should not be too dry or too wet.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
After resting, divide the dough into equal-sized balls and roll them out into thin rotis.
Heat a tawa or a flat griddle over medium heat. Place the rolled roti on the tawa and cook for 1-2 minutes until bubbles start to form on the surface.
Flip the roti and cook for another 1-2 minutes until both sides are cooked and have brown spots.
Repeat the process with the remaining dough balls.
Serve hot.
