Cooking Steps
Step 1: To begin making Gul Poli recipe, we will first make the dove to prepare the poli (flat bread)
Step 2: In a large mixing bowl, mix the wheat flour and the all purpose flour along with salt
Step 3: Heat 1 tablespoon oil in a tadka pan
Step 4: Make a well in the middle of the flour mixture
Step 5: Pour hot oil in it
Step 6: Mix well
Step 7: Add warm water to make a soft dough
Step 8: Knead the dough well
Step 9: Keep aside covered with a wet cloth
Step 10: We will now proceed to make the filling for the Gul Poli
Step 11: Take a mixing bowl
Step 12: Grate the jaggery in it
Step 13: Add cardamon powder to it and mix well
Step 14: Add 2 tablespoon warm water to the mixture and let the jiggery dissolve in water
Step 15: The mixture should be thick and not watery
Step 16: Heat a pan on medium heat
Step 17: Add sesame seeds and poppy one by one and dry roast them together for 1 minute
Step 18: Let the seeds cool
Step 19: Grind them to a smooth powder and keep aside
Step 20: Heat a pan on medium heat
Step 21: Add 2 teaspoon ghee in the pan and add the gram flour
Step 22: Let the gram flour roast on low heat till it changes its color to brown and roasted aroma comes out of it
Step 23: Turn off the heat, transfer it to a plate and let it cool
Step 24: Add the sesame and poppy seed powder and the roasted gram flour to the jaggery mixture and mix all ingredients well, The stuffing for Gul Poli is now ready
Step 25: The dough is rested well by now
Step 26: Make a lemon size ball of the dove at a time
Step 27: sprinkle some flour on the rolling surface
Step 28: Roll the dough to the size of a poori (3-4 inch diameter circular shape)
Step 29: Place 1 tablespoon filling in the center
Step 30: Close it by covering the edges at top so that the filling does not come out
Step 31: The procedure is exactly the same as a stuffed paratha
Step 32: Roll out the ball to a circular shape
Step 33: The Gul Polis are usually thin and they crisp up after they cool down
Step 34: Meanwhile heat tawa on medium heat
Step 35: Cook the Gul Poli on both sides till golden brown
Step 36: Use ghee/oil for cooking both the sides
Step 37: Serve the Gul Poli in a serving plate, top it up with ghee and serve hot as a part of festive meal
