Instructions
Cooking Steps
In a pot, combine bulgur wheat and water. Bring to a boil.
Reduce heat, cover the pot with a lid, and let it simmer for 20-25 minutes until the bulgur is cooked and tender. Fluff with a fork and set aside to cool.
In a separate pot, bring a small amount of water to a boil. Add chopped asparagus and green beans. Blanch for 1-2 minutes until they are tender but still have a crunch.
Drain the vegetables and rinse them under cold water to stop the cooking process.
In a large bowl, combine cooked bulgur, blanched asparagus and green beans, halved cherry tomatoes, chopped fresh parsley, and chopped fresh mint leaves. Toss well.
In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.
Pour the dressing over the salad and toss well to coat.
Serve the salad.
