Instructions
Preparation
Press the tofu to remove excess moisture and cut into cubes. Optionally, pan-fry the tofu cubes until lightly golden for better texture.
Puree the tomatoes in a blender.
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Stir in minced garlic and grated ginger, and sauté for 1-2 minutes until aromatic.
Add tomato puree, turmeric powder, coriander powder, garam masala, red chili powder, and salt. Cook until the oil separates from the masala (about 5-7 minutes).
Reduce the heat and add water. Stir well to combine.
Gently add the tofu cubes into the gravy, ensuring they are coated well. Simmer for 5-7 minutes on low heat to allow the tofu to absorb the flavors.
Garnish with fresh coriander leaves and serve hot.
