Instructions
Preparation
- Blanch cauliflower florets for few mins.
- Peel, wash and cube potatoes.
Cooking Steps
In a large pan, heat oil over medium heat.
Add cumin seeds and let them splutter.
Add finely chopped onions and green chilies. Sauté until the onions are soft and translucent.
Add ginger paste and sauté for another minute until the raw smell goes away.
Add cubed potatoes, chopped carrots, cauliflower florets, and green peas. Mix well.
Add coriander powder, red chili powder, turmeric powder, and salt. Mix well.
Cover the pan with a lid and let the vegetables cook over medium heat for 15-20 minutes, stirring occasionally.
Once the vegetables are cooked, remove the lid and let the excess water evaporate.
Garnish with fresh coriander leaves and serve hot.
