Besan (chickpea flour)

Instructions
Cooking Steps
For Gatte:
In a bowl, mix together gram flour, turmeric powder, red chili powder, and salt.
Add water as required and knead into a stiff dough.
Divide the dough into equal-sized portions and roll each portion into a cylindrical shape.
Bring a pot of water to boil and add the gatte to the water.
Cook for 10-12 minutes until the gatte float to the surface.
Remove the gatte from the water and let them cool. Cut them into small pieces and set aside.
For Gravy:
In a bowl, whisk together the yogurt, cumin seeds, turmeric powder, coriander powder, red chili powder, and salt. Set aside.
Heat oil in a pan over medium heat.
Add mustard seeds and let them splutter.
Add cumin seeds, asafoetida, ginger-garlic paste, and green chili. Sauté for 1-2 minutes until the raw smell goes away.
Add the yogurt mixture and stir well.
Add the gatte pieces and mix well. Cook for 5-7 minutes until the gravy thickens.
Garnish with chopped coriander leaves and serve hot.
