Lobia (Black Eyed Peas)
0.25 cup (50g)
Common salt
0.5 tsp (2.5g)
Cumin seeds
0.5 tsp (2.5g)
lemon juice
1 tbsp (15g)
Fresh Coriander Leaves (chopped)
2 tbsp (10g)
Olive Oil

Green gram, whole
0.25 cup (50g)

Instructions
Preparation
Sprouting green moong dal: Soak green moong beans overnight. Drain and leave them in a warm place for 1-2 days to sprout. Rinse and steam the sprouted moong beans until slightly tender but not mushy.
Boil Lobia: Soak dry lobia overnight and boil them with a pinch of salt until soft.
Cooking Steps
Heat oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add minced garlic to the pan and sauté for 1-2 minutes until aromatic (don’t let it burn).
Add the steamed moong sprouts and boiled lobia to the pan. Toss well to coat them in the garlic and oil mixture.
Add salt and black pepper. Mix well and let the mixture cook for 2-3 minutes to warm through.
Turn off the heat and squeeze fresh lemon juice over the salad.
Garnish with chopped coriander leaves.
Serve it.
