Instructions
Preparation
Peel, wash and cut potato into cubes.
Cooking Steps
Heat oil in a pan or skillet over medium heat. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until they turn translucent.
Stir in ginger-garlic paste and sauté for a minute until fragrant.
Add turmeric powder, coriander powder, red chili powder, garam masala and salt. Cook for a couple of minutes until the spices are well-incorporated.
Add diced potatoes and cook for about 5 minutes, stirring occasionally.
Add the sliced gajar and stir well to coat them with the spices.
Cover the pan and let the vegetables cook for about 10-15 minutes or until the beans and potatoes are tender, stirring occasionally. If needed, you can sprinkle a little water to prevent sticking.
Garnish with fresh coriander leaves.
